Mango, Banana & Honey Smoothie
A naturally thick large-batch smoothie blending mango, banana, honey and orange juice.
Time10 minLevelEasyMakesApproximately 4–5 litres, depending on fruit size
Behind the plate
Mango and banana create a creamy smoothie without dairy. A small amount of orange juice loosens the dense fruit while reinforcing the tropical flavour, and honey rounds any fruit that is not fully sweet.
Because the formula is designed for volume, blending in batches protects the machine and gives a more consistent texture than overfilling one jug.
Why this recipe works
Banana supplies body, mango brings aroma and colour, and orange juice provides enough liquid for smooth blending. Honey can be adjusted after tasting because fruit ripeness controls most of the sweetness.
The recipe
Ingredients
- 3 kg ripe mango flesh
- 10 ripe bananas, peeled
- 50 ml honey
- 300 ml orange juice
Method
- Chill all the fruit and orange juice before blending.
- Cut the mango and banana into pieces suitable for the blender.
- Blend in manageable batches with proportional amounts of orange juice until completely smooth.
- Add the honey gradually, blend again and taste before using the full amount if the fruit is already very sweet.
- Combine all batches in a clean chilled container, stir thoroughly and serve immediately, or cover and refrigerate briefly.
Chef’s notes
- Use fully ripe, aromatic mango for the strongest flavour and smoothest texture.
- Do not overfill a blender with dense fruit; process in batches within the machine’s safe capacity.
- Banana darkens after blending, so prepare close to service and keep chilled.
- Honey is included in the supplied formula but may not all be needed after tasting.
At the table
Serve well chilled in small glasses, with no additional garnish needed.
