White Miso Butter Emulsion
A smooth ivory butter sauce layered with white miso, confit garlic and a precise citrus finish.
Behind the plate
White miso brings sweetness, salinity and rounded umami without overpowering the butter. The result is a versatile restaurant sauce that feels rich but remains clean enough for vegetables, fish and shellfish.
This finish is deliberately simple. Its success depends on adding the miso over gentle heat and tasting before adding salt, because the paste already provides much of the seasoning.
Why this recipe works
White miso disperses through the warm master emulsion and reinforces its creamy body. Confit garlic adds savoury depth, while fresh and pickled lemon prevent the butter and miso from tasting heavy.
The recipe
Ingredients
- Master butter emulsion, as needed
- 15 g confit garlic
- 30 g white miso paste
- 5 g lemon juice
- Pickled lemon juice, to taste
- Fine salt, only if needed
Method
- Prepare the Master Butter Emulsion and transfer the amount required for service to a clean saucepan.
- Warm it gently, keeping the temperature below a simmer.
- Whisk in the white miso paste, confit garlic and 5 g lemon juice.
- Blend briefly with a hand blender until the sauce is completely smooth and glossy.
- Finish with pickled lemon juice. Taste before adding any salt, then serve without boiling.
Chef’s notes
- Use white miso for its gentle sweetness and pale colour; darker miso will create a more forceful sauce.
- Taste before seasoning because miso brands vary considerably in salt level.
- Blend only until smooth—extended blending can introduce air and make the sauce look foamy.
- A few drops of warm water will loosen the emulsion if it becomes too thick on the pass.
At the table
Pair with roasted mushrooms, grilled leeks, glazed aubergine, scallops or white fish. It also makes a rich finishing sauce for steamed greens and rice dishes.
