The recipe
Ingredients
- Coating base:
- 4 L pasteurised liquid egg whites — Keep chilled.
- 3 kg cornflour — Starch, not coarse maize meal.
- Herbs & spices:
- 250 g fresh coriander — Wash, dry and roughly chop.
- 200 g garlic — Peeled and minced.
- 200 g fresh chillies — Stalks removed; roughly chop.
- 100 g cayenne pepper — Source quantity: very hot, so trial a small batch first.
- 100 g salt
- For cooking — additional:
- boneless chicken fillets — Evenly portion and flatten to a consistent thickness.
- neutral frying oil — Within the fryer’s fill limits.
Method
- 1. Start with a 10% trial: Use 400 ml egg whites, 300 g cornflour, 25 g coriander, 20 g garlic, 20 g chillies, 10 g cayenne and 10 g salt. Check coating thickness, heat and adhesion on a cooked test fillet before committing to the full batch.
- 2. Blend the aromatics: Blend the chilled egg whites with the coriander, garlic and chillies until finely dispersed. Keep the blender head submerged to minimise foaming.
- 3. Whisk in the dry ingredients: Mix in cayenne and salt, then add cornflour gradually while whisking. Cornflour disperses into a suspension rather than dissolving: whisk again whenever it settles.
- 4. Set up the cooking station: Keep the main batch chilled at 0–5°C. Transfer a small working quantity into a separate container. Heat frying oil to 175°C.
- 5. Coat and fry: Pat the evenly portioned chicken dry. Coat in the working batter, let excess drip away and lower carefully into the oil. Fry in small batches until the centre of the thickest fillet reaches 75°C and the coating is crisp. Time depends on fillet thickness and fryer recovery.
- 6. Drain and serve: Drain on a rack and serve immediately. If using in a burger, use separately prepared buns, sauce and salad. Discard batter that touched raw chicken; do not return it to the clean batch.
Chef’s notes
- Do not judge chicken doneness by the colour of the crust.
- Cayenne, fresh chilli heat and the egg-white product all affect the result; record the exact products used.
- Editorial review: Source quantities are retained, including the very high chilli/cayenne load; a small cooking trial is required.
- Editorial review: The source’s 7.5–8 L and 75–80 fillet coverage are unmeasured.
- Editorial review: Removed the unsupported claim of long-lasting crispness under heat lamps.
- Storage: Keep clean unused coating at 0–5°C and make close to service. Discard all raw-chicken-contact coating after service. Do not claim extended crispness under heat lamps; validate any hot-holding process separately.
- Conditional allergens: Pure cornflour is naturally gluten-free, but do not claim a gluten-free finished dish without checking labels, fryer use and cross-contact controls.
At the table
Use for freshly fried chicken fillets. Burger buns, salad, cheese and sauces are not included in this coating formula.
