Crisp Homemade Jalebi
Golden spirals of lightly fermented-style batter, fried crisp and soaked briefly in warm cardamom syrup.
Behind the plate
Jalebi is a contrast of textures: a crisp fried shell surrounds a syrup-filled centre. The batter must be thick enough to hold a spiral but fluid enough to pipe in one continuous line.
A short rest hydrates the flour and yoghurt, while the warm—not cold—syrup is ready before frying begins. Each jalebi moves from oil to syrup while still hot so it absorbs flavour without becoming soggy.
Why this recipe works
Yoghurt and baking soda aerate the batter, controlled frying sets the shape and drives off water, and a brief dip lets warm syrup enter the crisp spiral by capillary action. Cardamom perfumes the syrup without masking the caramelised crust.
The recipe
Ingredients
- 1 cup plain flour
- 2 tbsp plain yoghurt
- ½ tsp baking soda
- ½ tsp ground turmeric
- ½ cup water, adjusted for batter consistency
- Oil, for deep-frying
- For the syrup: 2 cups granulated sugar
- For the syrup: 1 cup water
- For the syrup: ¼ tsp ground cardamom
Method
- Whisk the flour, yoghurt, baking soda and turmeric together. Add the water gradually to form a smooth, thick but pipeable batter.
- Cover and rest the batter for 30 minutes.
- Meanwhile, combine the syrup sugar and water in a saucepan. Heat until dissolved, add the cardamom and simmer for 5 minutes. Keep warm.
- Heat frying oil in a deep pan over medium heat. Transfer the batter to a piping bag or squeeze bottle.
- Pipe small connected spirals directly into the hot oil, working in batches with plenty of space.
- Fry until crisp and evenly golden on both sides, then drain briefly.
- Immerse each hot jalebi in the warm syrup for approximately 30 seconds, turn once, then lift onto a rack or serving plate.
Chef’s notes
- Test one spiral first. If it disappears into the oil the batter is too thin; if it breaks while piping it may be too thick.
- Keep the syrup warm and fluid but not at a hard boil during soaking.
- Fry at a controlled medium temperature so the spirals become crisp before they darken.
- Turmeric supplies colour in this formula; use the measured amount so its flavour remains subtle.
At the table
Serve warm on its own or with unsweetened yoghurt, masala tea or a few crushed pistachios if desired.
